For The Dressing:
- 1 garlic clove, peeled and finely chopped
- 1 fresh red chilli, finely chopped
- 3 tbsp Thai fish sauce
- 2 tbsp fresh lime juice
- 20 cooked tiger prawns
- 8-12 small broccoli florets, steamed and cooled
- 1 medium mango, peeled and cut into strips
- 1 red pepper, cut into thin strips
- 1 small red onion, peeled and finely sliced
- 1 large handful fresh mint, leaves stripped
- 1 large handful fresh coriander / cilantro, chopped
- Whisk all the dressing ingredients together, or whizz in a blender.
- Combine the remaining ingredients in a bowl, toss together with the dressing and serve.
