VICKI EDGSON’S PURPLE/PINK PLUM AND CHIA BREAKFAST COUPE
“What is more mortifying than to feel that you have missed the plum for want of courage to shake the tree?” Logan Pearsall Smith
Best smoothie bowl ever! Make a batch and keep it in the fridge for up to four days, or serve as a light Sunday brunch for health conscious friends. If you keep the fruit separately you can of course top yoghurt and other granolas with it, and the quinoa/chia base will keep for longer. Add coconut or nut mylks as you like. This is an infinitely adaptable recipe.
NUTRITIONAL VALUE: ENERGISING.
Chia seeds are an excellent form of vegetarian protein, and omega-3 essential fats, as well as providing a gentle form of fibre to increase efficient elimination, wonderful for those with a sluggish digestive system. The star anise, cinnamon and nutmeg, respectively provide anti-microbial, blood sugar-regulating and mood-enhancing benefits and the plums are packed with antioxidants, beta-carotene and vitamin C. A combination that is sure to give you plenty of get-up-and-go to start your day.
