AMANDA CROSS’ APPLE AND GINGER COMPOTE

This combination is perfect for a healthy dessert, or equally as delicious with Greek yoghurt and granola for breakfast!

Ingredients

  • 2 inches fresh Ginger, finely sliced
  • 4-5 Plums, quartered
  • 3-5 Cooking Apples
  • 2 tablespoons of Honey
  • ½ teaspoon ground Cinnamon
  • 2 tablespoons of Water

Method:

  1. Add all of the ingredients to a heavy-based saucepan and gently heat until bubbling.
  2. If freezing, cover and summer for 10 minutes until the apple is just soft and still holding its texture. If using immediately, cook for another 5 minutes.
